This week’s Weekly Bake Off challenge was Lemon Yoghurt Cake from Mary Berry‘s 100 Cakes and Bakes. This was another of Mary’s easy and delicious recipes and would have been really healthy and low fat as I used 0% fat Greek yoghurt but then I spoilt the good intentions by lathering a thick layer of icing over the top! (Yum!)
Lots of other baking has been going on this week – I made 24 pretty cupcakes for the WI for a cupcake sale to raise money for the NSPCC. I finished my first Royal Icing course by completing a Mother’s Day cake and I also attempted my first meringue cake. This was a special gift for my mum as she loves cream and meringue. I found the recipe in Tina Bester’s ‘Bake’ although mine wasn’t as perfect looking as her! It was basically a meringue cake mixture, with rose water flavouring, baked in two 8″ round cake tins. It was sandwiched and topped with fresh, whipped double cream and topped with real frosted roses and petals. It tasted delicious and I may attempt it again as it certainly had the wow factor!
