Apple, Orange and Cinnamon Jelly

After thinking that I’d used all my apples a friend gave me some of hers at the weekend – desperate to give them away! I have tried so many recipes involving apples recently and decided to make something else towards my christmas gift hampers. I had previously made a lovely Apple and Sage Jelly from The National Trust Complete Traditional Recipe Book and decided to adapt this to make something more christmassy. I had plenty of oranges and thought the cinnamon would add a nice touch for this time of year. Tastes lovely!

To Make:

1 kg cooking apples

4 oranges

1kg caster sugar

1 1/2 litres water

4 cinnamon sticks

Chop the fruit roughly without peeling and add the cinnamon sticks and water. Simmer for 1 1/2 hours. Strain through a muslin bag. Add the sugar to the remaining liquid and take back to the heat. Heat gently until the sugar is melted, stirring all the time. Then bring to the boil and boil rapidly without touching until it reaches setting point. The jelly can be sieved again to remove any scum and poured into sterilised jars. This amount filled 6 small jars.
