Port and Orange Jelly



I have made a start on thinking about what to give as home-made christmas gifts. Today I made Port and Orange Jelly which is absolutely delicious and will be a lovely edible gift (recipe below). I have also made Tiny Fruit Cakes to decorate. These were made from Mary Berry’s 100 Cakes & Bakes page 195. I am planning to make Gingerbread stars and christmas trees, shortbread, Red Plum, Cranberry  & Cinnamon Jam and St. Clement’s Curd (made with oranges and lemons). I would also like to try to dry some sliced oranges and tie together with some cinnamon sticks in ribbon. Phew! Better get cracking!

Port & Orange Jelly Recipe

1 Pint port

1/4 Pint water

Grated zest and juice of 4 medium oranges and 1 lemon

2 1/4 lb Granulated sugar

8 oz Liquid pectin

Stir the port, water, zest and juice and sugar over a low heat in a large pan until the sugar has dissolved. Bring to the boil and boil rapidly for 15 minutes. Then add the pectin and boil for a further 2 minutes. Turn off the heat and test to see if the jelly is setting. If ready leave to cool a little then pour into hot sterilised jars and seal.
