Wimbledon Cake

What better bake than Mary Berry’s Wimbledon Cake for last week’s Weekly Bake Off and I was really looking forward to this one! Mary’s cake looks absolutely lovely in the picture in her 100 Cakes and Bakes and I love strawberries and cream. The really good part was that there was no flour and no fat used which I felt was quite virtuous and cancelled out the calories in the cream. Mary’s cake is baked using semolina, three large eggs, caster sugar and the zest and juice of 1 lemon – how simple! I have to say I was a little disappointed when I saw mine come out of the oven as it seemed rather flat and I had to somehow slice it in half and fill it. I let it cool and then cut it and filled it with whipped double cream and a layer of strawberry jam. ( Mary filled hers with passion fruit and cream). Once it was topped with sliced strawberries and a showering of icing sugar the cake looked a little better but still nothing like the pretty one in the book that I had aspired too. However, the taste made up for the look – it was so light – I loved it and so did the others who managed to sneak a piece before I ate it all :)
