Mary Berry’s Strawberry Pavlova
This week’s Weekly Bake Off challenge was Strawberry Pavlova from Mary Berry’s 100 Cakes and Bakes. The recipe can also be found here :-

Seemingly Pavlova originates from Australia and can be quite difficult to make if you don’t have a good recipe. This is my first attempt at Pavlova and I’m delighted with the result. Mary’s recipe is clearly a good one as I found it extremely easy to follow. It has a lovely crisp topping which has cracked a little but Mary says that’s ok and it adds to its charm. The best part though is the deliciously gooey marshmallow-like centre. I did over whip my cream a bit but despite its little imperfections the overall effect of the Pavlova is show-stopping and definitely one to bring out at a party!
NB I drizzled a little strawberry syrup over the top of my Pavlova which is not in the recipe
