Raspberry Meringue Roulade

   This was not my finest hour! Although it actually tasted quite delicious, my Raspberry Meringue Roulade didn’t really look that great. This was the Weekly Bake Off challenge for this week and it certainly was a bit of a challenge! Things to do better next time:- continue to read the instructions carefully right to the end as a) I didn’t wait till the meringue had properly cooled before adding the cream and b) I didn’t exactly mix in my fruit gently – both these things caused the cream to go rather runny not at all like the lovely thick cream in Mary Berry’s picture. On a positive note though the strawberries I used instead of raspberries gave it a slightly ‘tart’ taste which went well with the sweetness. It got lots of positive comments on the family taste test too so passed as scrumptious!
